10 Amazing Vegan Sweet Potato Recipes

10 Amazing Vegan Sweet Potato Recipes

Nothing gets me in the mood for sweet potatoes quite like the start of Autumn. Sweet potatoes are great because they are cheap, easily available, tasty and really good for you. They’re great for your immune system as they contain good amounts of vitamin A, iron and potassium. They’re high in dietary fibre which aids digestion and can help with weight loss. I’ve sourced together some of my favourite recipes which will hopefully inspire you to cook more with sweet potato.

1 Pot Chickpea Sweet Potato Curry, Vegan Richa

Curries are one of the easiest ways to introduce sweet potatoes into your diet. This one pot curry is nice and simple yet full of flavour. This recipe is totally popular with omnivores as well as vegans – great for impressing friends!

Sweet Potato Vegan Burger, Tim Shieff

Vegan free runner, Tim Shieff, works occasionally on Jamie Oliver’s YouTube channel to share healthy yet tasty vegan recipes. These burgers were easy to make, although quite time consuming first time round, and totally delicious. I definitely recommend making the sweet pineapple salsa to accompany this dish, as it compliments the burger so nicely.

Sweet Potato Brownies, Deliciously Ella

Don’t knock it til you try it. These brownies are so delicious and chocolatey, you’d hardly guess they were made from veg. With medjool dates, maple syrup and almonds contributing as key ingredients this isn’t a cheap dish to make,  but damn do they taste good.

Sweet Potato & White Bean Chilli, Jamie Oliver

Jamie Oliver is suprisingly vegan friendly. Not only do his restaurants across the UK offer tasty vegan options, but also his recipe site contains over 100 vegan recipes. This recipe is simple, healthy, delicious and mild – so add some extra chilli if you like yours spicy!

Thai Sweet Potato Stack with Peanut Sauce, Minimalist Baker

Everything goes well with peanut butter, including sweet potato. This recipe is a must for peanut butter lovers as it pairs green veg with sweet potato and peanuts. Truly delicious and easy to follow.

Creamy Tomato Soup, Global Animal

This recipe is so easy and involves such few ingredients. This is the tastiest tomato soup I’ve ever had – can’t believe it’s so healthy too! Perfect for those missing a good ol’ creamy soup in the colder months. Best served with (vegan) buttered slices of your favourite bread.

Vegan Shepherd’s Pie, Tim Shieff

Another Tim Shieff recipe (I love this guy and this guy loves his sweet potatoes). This time round he shows how to make a healthy vegan Shepherd’s Pie using sweet potato and no faux-meat.

Sweet Potato & Black Bean Burritos, Kim’s Cravings

This tasty dish is quick to throw together and perfect for sticking in a packed lunch for work or school. The sweet potatoes and black beans make this dish wonderfully filling and full of protein.

Sweet Potato Hash Browns, Peaceful Dumpling

I love sweet potato hash browns as they’re super tasty and healthy. This recipes pretty fun, although you may be surprised how much effort can go in to grating potatoes! This is the perfect accompaniment to any vegan fry-up.

Sweet Potato Pie, Chocolate Covered Katie

This classic American dish is a perfect desert from Autumn through to Christmas thanks to the festive addition of cinnamon and cloves to this dish. Ideal for those trying to nurse a sweet tooth without jeopardising their health kick.
